Tomato Egg Curry

One of my favourite dishes is the simple tomato curry. Quick and easy to make especially when using tomato puree, just add a boiled egg to it to turn it into a complete meal. Tomatoes are an extremely rich source of Lycopene and Vitamin C, and a powerful antioxidant. Tomatoes are a pregnant women’s friend and are rich in Folate and Folic acid which helps your body to produce and maintain new cells, especially red blood cells. Eggs are pretty much the perfect food. They contain a little bit of almost every nutrient that you need. To make this dish, fry an onion after tempering some mustard seeds and curry leaves. Once the onions are soft add Ginger garlic paste followed by the Tomato puree and a green chilly. Add salt, chilli and turmeric powder, some water and simmer for 10 minutes or until desired consistency is reached.
