Kebabs are considered to have originated in Turkey when soldiers used to grill chunks of freshly hunted meat skewered on swords on open field fires. Ibn Battuta, the famous Moroccan traveller has mentioned that Kebab was an important part of the daily diet of Indian royalty as early as 1200 AD. The pre-Mughal Kebab was more about the marinade and meat-being more of rustic chewy chunks, char-grilled in open ovens , but with the Mughals it evolved into a delicacy, that was soft and succulent, made richer with aromatic spices and dry fruits. But kebabs in the Indian context is not just about meats. In fact some delicious variations like Hariyali Kebab, Paneer Tikka and Dahi Ke Kebab owe their origin to India. Some of the most famous kebabs include Sheekh, Shami, Reshmi, Chapli, Bihari, Tikka, Peshawari, Bihari, Boti, Kakori, Tangri, Kalmi, Hariyali and many more. A popular kebab in India, Pakistan and Bangladesh, Shami Kebab is usually made with meat, chana dhal and egg. Usually eaten as a snack and an appetizer, the kebab goes back to the Mughal era when Syrian cooks invented it in the emperor's kitchen. Bilad-al Shaam was the old name of Syria. Since Kebabs require minimal oil for grilling they are a much healthier option compared to other deep fried items especially when eating out.
