One of the most popular Indian rice dishes, the exact origins of the Biryani are unknown with some claiming that it developed in the Royal Kitchens of the Mughal Empire, while some claim that the dish originated in Persia and was brought to India by the Mughals and still others claim that the biryani is of South Indian origin, derived from pilaf varieties brought to the Indian subcontinent by the Arab traders. A rite of passage for any burgeoning Indian Cook, the ability to make good Biryani can define your culinary prowess irrespective of whether you are a professional chef or a newly wed bride hosting her first dinner. There have even been some instances where the wedding biryani was discussed more than the wedding itself!! Each state has it's own version of this dish with some states having two or more. This particular version involves the yakhni(gravy) and rice being cooked separately and then mixed together before being kept on Dum.
