Steaming hot puris or pooris are favourites from Punjab to Kanyakumari, Maharashtra to Bengal and the North Eastern region in India. It is also relished in Pakistan.
The basic construct of the puri seldom changes, the main change in taste that it gets would be based on whether it is fried in vegetable oil or desi ghee. The aloo sabji/ bhaji goes through a plethora of mutations based on which state you are eating this from. The version shown here is a Bengali Aloo curry where they typically use 5 spices or paanch phoron. (Usually this comprises of cumin seeds, fenugreek seeds, fennel seeds, black mustard seeds and nigella/ kalonji seeds).
