Kootu is a quintessential South Indian Dish made by stewing lentils and vegetables together. Delicious when eaten with rice or roti and even by itself, no Thali is complete without it. Known for its versatility, a Kootu can be prepared using Moong, Toor or Chana Dhals as well as most any vegetable you may have on hand, though it is traditionally prepared using snake gourd, bottle gourd, ridge gourd, spinach or Chow Chow. Chow Chow, also known as Chayote Squash or Mirliton Squash, is a green pear-shaped fruit belonging to the gourd family. It is often used as a vegetable and its mild flavour makes it a versatile addition to a variety of dishes. Chow Chow has very few calories but a lot of fiber – the two key attributes for promoting weight loss. Fiber as we all know slows down the rate at which your stomach empties, leaving you feeling full and satisfied for longer — which in turn may decrease food intake. Apart from being a rich source of dietary fiber, chow chow is also rich in magnesium, phosphorus, potassium, vitamin C and choline. Another strong suit of this vegetable is its folate content, which is helpful for cell division and DNA synthesis. Pregnant women can benefit from folate as well, as it helps inhibit neural tube defects among babies.
