Often claimed to be the perfect health food, carrots have long been a staple in the Indian kitchen. Carrots have numerous health benefits. They are a particularly good source of beta carotene, fiber, vitamin K1, potassium, and antioxidants. Carrots boost eye health, skin health, immunity, lower blood pressure and aid weight loss. To make this dish fry a couple of onions after tempering some mustard seeds and curry leaves. Once the onions are soft add the carrots, turmeric powder, chilli powder and salt. Cook with lid closed until done. Fun fact: Too much carrot can make your skin turn yellow from a condition known as carotenemia.
